A little story behind the scenes
Canet is located in the highest altitude region of coffee cultivation in Tarrazú, Costa Rica, where the dense cultivation of fruits, particularly passion fruit, is prevalent. Coffee is relatively scarce here, grown in a specific area where special care is taken to harvest only ripe red cherries.
The raisin honey process used at Canet involves a dual fermentation method. First, the coffee cherries are sun-dried to a raisin-like state, then pulped and subjected to a honey process. This technique retains 100% of the mucilage, resulting in intensified fermentation notes and a distinctive raisin-like flavor. The processing method is notably sweet, delivering a sensory experience akin to white wine, complemented by balanced acidity.
