A little story behind the scenes
This coffee is named after the local milling facility in Popayán, located in the southwest region of Colombia. Cauca shares borders with the departments of Tolima, Huila, Caquetá, Putumayo, and Nariño, and it faces the Pacific Ocean. The region boasts stunning landscapes, including rainforests, basins, and volcanoes, along with natural parks. It supports a diverse range of crops, such as sugar cane, panela, potatoes, corn, yucca, beans, tomatoes, and coffee, which is grown on the undulating slopes of Cauca, creating captivating scenery.
Ethyl Acetate Decaf is a method of decaffeinating coffee using ethyl acetate, a naturally occurring compound found in fruits. The process begins by soaking coffee beans in water to open their pores, followed by treatment with ethyl acetate, which selectively bonds with caffeine molecules for extraction while preserving flavor compounds. Considered a more "natural" method, ethyl acetate is derived from plant sources like sugar cane or fruit and effectively maintains the coffee's original flavor profile. Recognized as safe by food authorities, any residual solvent is typically well below safety limits, making ethyl acetate decaf a popular choice for enjoying coffee without caffeine while retaining much of its original taste.
