The coffee beans used by the champion of the 2018 Japanese Barista Championship were sourced specifically from El Pilón processing mill.
El Pilón Micromill, located in Leon Cortez on the border of Costa Rica's Tarrazú region, is the country’s first government-approved fully sun-drying processing mill. Owned by Edgar Urena, it emphasizes meticulous coffee processing and detail.
Known for its high-quality coffee and sustainable practices, El Pilon uses a small-batch micromilling process for strict quality control. The micromill collaborates with local farmers to enhance coffee quality and economic stability, producing coffees with unique flavor profiles, including fruity, floral, and chocolatey notes. It is celebrated in specialty coffee circles for its exceptional offerings and commitment to sustainability.
